Listening to the

There is a quiet space
around the bowl, and within it.
We were taught to treasure that space.

The composure of plating is a quiet promise that decides the beauty of a dish. We listen for the ingredient’s voice, and with fire, water, and a single pinch of salt, gently raise the scent of the season.

Morning catch from Sanbanze, peanuts from Yachimata, seasonal vegetables from Inba. Local ingredients from local hands — warmth and all — onto the plate.

Today’s menu

A monthly omakase course. The chef composes each dish to the day’s catch and weather. Tonight’s menu unfolds at the dusk table.
本日の一椀

A lamp at the counter,
shadows at the seats.

Eight seats only. The sound of fire moving, of sake being poured. A chain of whispers weaves the landscape of the night.

A small restaurant in a renovated Showa-era townhouse. From across the cypress counter, join the cooking from beginning to end. Reservations only.

06 Craft

The work of tying days together.

i. 仕入れ

At the morning market,
listening for voices.

Before dawn, we walk through the Funabashi central market and the Sanbanze docks. The day’s menu is shaped in conversation with the brokers — leaving room undecided is how we begin to face the season.

ii. 仕込み

Fire, water,
a single pinch of salt.

Dashi is drawn once at dawn and once at dusk. To bring out the ingredient’s own voice, we subtract rather than add. Taking time to make time of doing nothing — that is our preparation.

iii. 盛り付け

Tying the season
into a vessel.

Mashiko, Kasama, Kutani. The final brushstroke of the meal is laid into vessels of potters we have worked with for years. The empty space on the plate is part of the taste.
