When green plums come,
the work of summer begins.

The green plums have arrived — this year a little smaller, from our usual grower in Inba. Salt-cured now, sun-dried at midsummer. The sound of pickling is the sound of summer beginning. Trimming each stem by hand is how we mark the turn of the season.

2026.04.30 季のたより

First bonito,
with the new ginger.

The first bonito from Katsuura. Skin lightly seared, served with new ginger — a gentle, fresh composition this year.

2026.04.21 うつわ

A visit to Yoshino-san,
potter of Kasama.

A trip to Kasama to consult on summer vessels. Conversations beside the kiln always change how we think about cooking.

2026.04.14 仕入れ

A morning at Sanbanze,
news of shirasu.

Shirasu season opens. A few words with the fishermen on the beach at dawn — the season’s voice lives in the smallest, clearest things.

2026.04.03 覚え書き

After service,
when the lamps go down.

After the final guest has left, we turn down the counter lights. The quiet of the day’s end is something we hold dear.

2026.03.27 季のたより

Cherry blossoms
and whitebait.

Salt-cured cherry blossom and whitebait. Pale things kept pale. This spring was short, and so we lingered over each taste.

2026.03.15 うつわ

New small plates,
arriving from Mashiko.

Small plates by a young Mashiko potter. The earthy clay suits the food well. We are happy to meet a vessel that will stay with us for years.
